Processing:
César's workers start by handpicking perfectly ripe coffee cherries. These cherries are then spread in thin layers on drying beds, where they dry over approximately 10 days. The workers turn the cherries regularly to ensure even drying. Once a specific moisture level is reached, the dried cherries are hulled and prepared for export to our roastery.
Best for:
Espresso, milk-based drinks, and filter coffee.
Barista's Recommendation:
Set your espresso machine to 6 bars of pressure and a temperature of 93°C. Grind 18g of coffee and extract 42g of espresso in 30 seconds. Adjust the output to your preference.
Always use filtered or bottled water with an alkalinity of 60–80 ppm.
Good to Know:
For espresso preparation, always use beans that are at least 10 days post-roast. After opening the bag for the first time, let it vent for at least 24 hours before brewing. This helps avoid unwanted bitter notes in the flavor.
