Why Wait
The roast date significantly affects coffee taste. Coffee is a unique food where "the fresher, the better" doesn't apply. During roasting, a large amount of carbon dioxide forms inside the beans, which then gradually releases. If you brewed coffee from these beans during this period, it would likely be unpleasantly bitter or sour.
When Is Coffee Ready?
- Espresso: 3 weeks after roast date
- Filter: 4–5 weeks after roast date
Tip: Let Coffee "Degas"
The day before brewing your coffee for the first time, open the package, shake it (this disrupts the protective atmosphere), and close it again. Ideally, do this 24 hours before consumption. If you don't want to wait that long, we recommend doing it at least the evening before.
