Edinson first carefully sorts perfectly ripe coffee cherries to remove defects and then oxidizes them for 24 hours in plastic barrels. This is a key step for the subsequent fermentation with enzymes, as it helps the cherries better withstand the process. The cherries are then dry-pulped and fermented for 72 hours together with coconut and an enzymatic extract, which helps the coconut flavors penetrate through the parchment layer that protects the coffee bean. For precise drying control, Quebraditas uses electric dryers that can dry the coffee in just 72 hours, significantly reducing processing time and allowing Edinson to quickly evaluate the quality of the production.
Best for:
Pour the contents of the sachet into a cup and add 160 g of hot or cold water. Stir well. For milk-based drinks, add instant milk. Anytime, anywhere.
Barista recommendation:
For the best flavor, brew the coffee with water at 70°C. Ideally, use filtered or bottled water with an alkalinity of 60–80 ppm.
