Processing:
Edinson Argote is a very innovative farmer we met during our trip to Colombia in 2023. He focuses especially on advanced fermentations and fermentations with various additives.

A highlight of this coffee is its variety – Typica Mejorado. Typica Mejorado is a new, modern cultivar that hasn’t been widely seen in the past. It’s known for its relatively large bean size, making it quite similar to the famous Gesha variety.

This coffee is processed as a washed coffee. How does the process work? Edinson first soaks the cherries in water. The floaters are sorted out and removed. Then, the cherries are depulped, and the fermentation bath begins – the coffee is placed into a tank filled with water and enzymes are added to support the fermentation. During the process, several rounds of thermal shock are performed – the coffee is transferred into bags and cooled down by submerging them in cold water. This keeps the fermentation temperature under full control. After each thermal shock, the coffee goes back into the fermentation tank. When fermentation is complete, the coffee is dried, then hulled in the dry mill, and finally ready for its journey to the roastery.

Recommended brewing methods:
A great choice for hoop, pulsar, V60, batch brew, aeropress, or any other pour-over method. Also great for espresso.

Barista’s tip:
For the best flavors, brew with water at 100 °C. The idea that you can “burn” the coffee with boiling water is a myth. We roast it at 600 °C, so there’s no way to burn it while brewing. Always use filtered or bottled water with alkalinity between 60–80 ppm.

Good to know:
For filter brewing, use beans at least 7 days after the roast date. After opening the bag, let it breathe for at least 4 hours before brewing. This helps avoid unwanted bitterness in the cup.
