Processing:
Edinson first sorts the perfectly ripe cherries from defects and leaves them to oxidize for 24 hours in plastic barrels. This step is crucial for enzymatic fermentation, as it helps the cherries withstand the process more evenly. After dry pulping, the cherries ferment for 72 hours together with coconut and an enzymatic extract, which supports the absorption of coconut flavor through the parchment layer protecting the bean. For precise drying control, Quebraditas uses electric dryers that ensure high-quality drying in just 72 hours—an enormous time saver that allows Edinson to quickly evaluate production quality.

A great choice for Hoop, Pulsar, V60, batch brew, Aeropress, or other coffee brewing methods. You’ll also enjoy it as an espresso.
Barista’s recommendation:
For the best flavors, brew with water at 100 °C. The idea of “burning” coffee with boiling water is a myth—we roast it at 600 °C, so there’s no risk of that. Always use filtered or bottled water with alkalinity in the 60–80 ppm range.
Good to know:
For filter coffee, always use beans at least 14 days after roast date. Once you open the bag, let it rest for at least 4 hours before brewing to avoid unwanted bitter notes.
